Pasta mit Kürbissauce und Ahornsirup-Räuchertofu | Pasta in Pumpkin (Squash) Sauce with Maple Syrup Smoked Tofu

Wir hatten noch ein paar Hokkaidokürbisse aus dem Garten meiner Schwiegermutter und ich habe überlegt, was man noch so Schönes damit zaubern kann. Als Pastasauce hat das super funktioniert!






Zutaten für 2 Personen:

  • 250g Pasta eurer Wahl
  • 1 mittelgroßer Hokkaidokürbis (ca, 800g Gesamtgewicht)
  • 300ml passierte Tomaten
  • etwas Wasser
  • 1 EL Öl (z.B. Rapsöl) für Sauce, 
  • 1 EL Öl für Tofu
  • Salz
  • 200g Räuchertofu
  • 2 EL Ahornsirup
  • ein Schuss Sojasauce
  • Chiliflocken
  • etwas frische Petersilie


Zubereitung:

  • Kürbis aufschneiden und die Kerne rausnehmen.
  • In grobe Stücke schneiden.
  • In einem mittelgroßen Topf Öl erhitzen.
  • Kürbisstücke dazugeben.
  • Eine Minute anrösten.
  • Leicht salzen.
  • Wasser hinzugeben bis alle Kürbisstücke bedeckt sind.
  • Je nach Größe der Stücke 20 - 30 Minuten kochen bis der Kürbis gar ist.
  • Passierte Tomaten hinzugeben.
  • Alles zusammen pürieren.
  • Mit Salz abschmecken.
  • Nudelwasser aufsetzen und gut salzen.
  • Nudeln kochen.
  • Parallel das Räuchertofu in Würfel schneiden.
  • In etwas Öl kross braten. Am Schluss mit einem Schuss Sojasauce und dem Ahornsirup ablöschen.
  • Nudeln mit Sauce vermischen und anrichten.
  • Tofu, Petersilie und Chiliflocken darüber geben. 
  • Fertig!

English version

We still had a couple of hokkaido squashes from my mother-in-law's backyard, so I tried to think about new ways to use it. Worked great as a pasta sauce!




Ingredients for 2 servings:

  • 250g of pasta of your choice
  • 1 medium sized hokkaido (red kuri) squash (about 800g total weight with seeds and everything)
  • 300ml of pureed tomatoes
  • some water
  • 1 tb sp of oil (for example canola) for the sauce
  • 1 tb sp of oil for the tofu
  • salt
  • 200g of smoked tofu
  • 2 tb sp of maple syrup
  • a dash of soy sauce
  • chili flakes
  • some fresh parsley

Instructions:
  • Cut open the squash and remove seeds.
  • Cut into chunks.
  • Heat oil in a medium sized pot.
  • Add squash chunks.
  • Salt lightly.
  • Roast for a minute.
  • Add water until all of the squash chunks are covered.
  • Simmer for 20-30 minutes (depending on the size of the squash chunks) until squash is fully cooked.
  • Add pureed tomatoes.
  • Blend everything until smooth.
  • Season with salt.
  • Heat up pasta water and don't forget to salt it generously.
  • Cook pasta.
  • In the meantime, cut tofu into cubes.
  • Fry in a bit of oil until crisp.
  • Finish with a dash of soy sauce and maple syrup.
  • Mix pasta and sauce, arrange on plate.
  • Add tofu, parsley, and chili flakes.
  • Done!
